Feeding the Community with Free Lunch Program

On Friday, June 13, the UUS team prepared Mexican Shepard’s pie for the meal along with fruit salad and homemade bars for dessert. Four roaster pans of the pie containing meat were prepared and a half roaster of a vegetarian version. All of the shepard’s pie was gone after 113 diners filled up (some with seconds and thirds) and took the rest as carry out.


Frank Wildensee came up with the recipe and the casseroles were assembled by Kezia Walker-Cecil, Theresa Ullerich, Star Wojciak, and Mimi Sherburne. Bonnie and Mark Penno cut up all the fruit which was donated. Pete Brokow made 2 kinds of bars for dessert. Gay Mikelson prepared the silverware and Joy Thompson served drinks. Terri O’Berry, Janet McKee, Carolyn Johnson and Carrie Norton served the meal and Caryl Lyons, Cynthia Crawford and Gary Lawrenson washed all the dishes.
Next month the team will serve lunch on Friday July 11. A chicken, rice, and broccoli casserole is tentatively planned. The group always has a good time and leaves feeling satisfied that a valuable community service has been provided.
